
GAYE'S APRICOT & VANILLA TART
-to fit one large loose bottomed tin
For the Pastry: combine all the ingredients in the magimix
1/2 teaspoon of vanilla essence
5 oz Plain flour
3 oz Butter
1 tblsp Caster Sugar
1 egg yolk
When you have lined the pastry tin, arrange the apricots on the pastry.
For the Tart filling
1lb pitted apricots (dried or tinned)
4 oz of butter
4 oz caster sugar
1 large egg
1 egg yolk
Beat together all the above apart from apricots
few drops of vanilla essence
1oz plain flour
200g crème fraiches
fold in all the above with the batter mix, then pour over the apricots
Delicious with clotted cream
